We're living in the age of wood-fired, custom-made, artisanal pizza. While bougie pizza parlors are popping up around the county at the rate of new poke restaurants, there will always be room in our stomachs for your small and simple neighborhood pizza joint. Parlors like Two Brothers in Fountain Valley have been around decades before the nouveax-pizza craze and, Jebus willing, will be around decades after it passes.
This non-descript parlor sits in a Brookhurst parking lot which still houses the ghosts of TKO Records and the Ebisu Japanese supermarket (RIP). It's the kind of place where visitors carve their initials in the wooden tables and the air is filled with the sounds of daytime television echoing from a box TV suspended near the ceiling. The same mild-mannered woman takes your order every time while the same man fires up the oven as you order.
The real draw here is the Lunch Special: two generous slices of cheese pizza and a medium soda for $5.09. The crust is thin and has a rewarding crunch when you bit in and the cheese is freckled with charred bits. You can add toppings to your slices if you wish (may we suggest kimchi & bacon?), but the cheese pizza is so solid, it's almost a shame to adulterate it. I don't know what kind of ranch they use, but it's the best dressing I've ever put on a pie. I'll gladly shell out 25 cents they charge for the magical white sauce again and again.
