Shin Toyoda leads Sushi Roku's team behind the most delicious bar at Fashion Island. He's also coy when responding to my questionnaire. Be sure to ask Shin about those dance moves the next time you spot him in Newport.
Shin began things yesterday in part one. Why don't you start there?
Then pour some sake and join us below.
When you're not in the kitchen creating, what are you doing?
Checking out new restaurants. Enjoying the company of friends and talking with my daughter.
Last song playing on your radio.
Oh, man. Something rock 'n roll.
Where did you grow up, and where do you currently call home?
Tokyo. Well . . Tokyo! (laughs)
Hardest lesson you've learned:
That's a tough one at the moment. I'll save this one for myself.
What's your favorite childhood memory?
One would be my first mochi. It was made fresh right in front of me! A great memory to a great food.
Are you superstitious?
I don't really think so. Taking on a challenge with belief in yourself takes more courage and is more rewarding.
Last book read; how was it?
Book was Musashi – Book of Five Rings, I believe. Just browsed sections to refresh my memory. Always a great reference.
Last thing you looked up online:
Fish that were new at the market. Seasonal vegetables.
Do you have any skills that have nothing to do with food?
I'm a great dancer! I like to ski, snowboard, fish, be outdoors and explore.
What would you be doing if you weren't in this business?
I feel it comforting to see myself as an owner of a bed & breakfast. Wine country. Great people, atmosphere and being able to acknowledge that and enjoy life on a more leisurely level.
