No. 33: “No Soup” Ramen at Santouka Ramen

It was a gutsy move on my part, deviating from my usual order at Santouka–a standard bowl of miso ramen that's pure comfort in a bowl. But I saw a special posted on a paper sign. “No Soup” Ramen, it read. In a game-time decision, I went for it.

“No Soup” ramen shouldn't be confused with hiyashi chuka, a soupless cold-noodle dish often topped with strips of ham and fried egg and served during the summer when a broth-sauna in your face sounds like misery. This dish, alternately, is hot, rich and hearty. A mound of seasoned ground pork sits atop a bed of perfectly al dente ramen noodles cooked in a shoyo-type broth and tossed in shimmery oil. Crunchy veggies and fresh sprouts give each bite texture, and the chili sauce makes it near impossible not to scarf down the whole thing like a madwoman and then lick the plate. The oozing, velvety yolks soft-boiled eggs put me into a happy, bloated coma.

“No Soup” Ramen appeared for a moment early this year, and now it's gone. I'm not sure if or when it will return. But if you see it again, get it. Take the damn chance.
