In the pantheon of Vietnamese soups, hủ tiếu gets the short end of the stick: everyone talks about phở, and then they sort of think of bún bò Huế as an afterthought, but nobody thinks of mì or hủ tiếu, perhaps because the broth that makes them up is so light and refreshing, or perhaps because this is a Cambodian breakfast dish in disguise. Hủ tiếu is made with pork stock and your choice of glass or egg noodles (or both). At Thanh Xuan, the acknowledged Little Saigon hủ tiếu experts, it comes with fish cake, with pork, with shrimp, and with mushrooms; if you ask and they have any, they'll put some huyết (pork blood) in there. You garnish it with the platter of herbs, with any kind of chiles you like, and with their famous blue garlic (which is blue because of a chemical reaction between raw garlic and the vinegar in which it's pickled, not due to food coloring or mold).
