#35. Ahi Poke at Fish Camp
I've had a lot of ahi pokes (pronounced “poh-kay”; not “poke” as in what you do to people in Facebook when you're bored) in a lot of places, even Hawaii. Imagine my shock when I tasted the dish again at Fish Camp and realized it trumped them all. Yes, even those from Hawaii.
Wait, some of you may ask, what is poke? Here's a one-sentence summary: poke (the word means “cut into small pieces” in Hawaiian) is raw cubes of fish, usually ahi tuna, sometimes seasoned with soy or sea salt, served cold.

That's exactly the basis that the Fish Camp folks start from. But then they manage to improve on perfection by adding chopped macadamia nuts, scallions, and what I think is Sriracha. The resulting triumph is a raw fish concoction more thrilling than crudo, spicier than sashimi. It's a raw fish dish of its own–lip-searing, salty, crunchy, silky, and above all, so refreshing it makes me yearn to take a dip in a North Shore beach afterwards.
It makes one wonder: if Fish Camp can elevate a dish that is often packaged and sold at supermarkets in Hawaii (the best kind come from the island state's supermarkets), what might they be able to do with that other Hawaiian delicacy, Spam musubi? I'm not holding my breath. After all, they're called Fish Camp; not Spam Camp.
