Ever since it opened in Old Town Orange five years ago and single-handedly ignited the waffle sandwich craze, Bruxie’s expansion seemed inevitable. It has since opened shops in Santa Monica, Brea, Chino Hills, Huntington Beach, Irvine, and San Diego.
And this year, it’s going to Vegas, baby!
The Orange County-based chain is going to open its first restaurant outside Southern California at The Park, a brand new outdoor mall by MGM Resorts that will sit between New York-New York and Monte Carlo hotels, scheduled to open April 4.
Bruxie will join New York-based Shake Shack there, along with a beer garden, California Pizza Kitchen, and Sake Rok, a restaurant serving sake and Japanese dishes.
