Holsteins Shakes and Buns–one of many restaurants in the portfolio of Block 16, a Las Vegas-based restaurant group–is now open in South Coast Plaza in the old Charlie Palmer space next to Bloomingdales.
They've been in a soft-open mode for the past few days and went through some minor delays, but their latest Facebook post promises that they will be open to the public today, September 2nd.

If you've been to the Holsteins in The Cosmopolitan in Vegas, you'll recognize some of the menu items that's offered at the South Coast Plaza branch, which should include The Rising Sun (pictured in their Instagram feed) consisting of: Kobe Beef, Teriyaki Glaze, Nori Furikake, Crispy Yam, Spicy Mayo, Tempura Avocado.
