Keeping track of John Kessler's many hot sauces is as difficult a task as counting blades of grass on a lawn. There's the Original Infinity (hot), the Double Infinity (hotter), the Chipotle Infinity (less hot, but still hot), the Double Chipotle Infinity (damn, son!)—and those are just the easily available ones. He even has limited releases that contain everything from carrots to stout beer to Hatch chiles (called Hatch-squatch, complete with a bigfoot logo) to one that tries to condense all of his sauces into one, oak-conditioned beast. Regardless of choice, however, all Infinity Sauces exhibit the same attributes: heat, flavor, consistency, wacky labels and fiery beauty. Throw out the Tabasco already!
