I count many chefs amongst my friends, but even amongst chefs, there are maybe a half-dozen total whom I would trust enough to order sauce Hollandaise in their restaurants. It's such a picky, finicky dish that goes south with the slightest error or delay. The owner of this popular place is one of the trusted half-dozen–so where'd I have the attached plate of eggs Benedict?
