Fullerton dwellers (and loyal frequenters), get ready to meet your new watering hole.
HopScotch, a rustic tavern in Downtown Fullerton's historic Pacific Electric Railroad Station, is set to open sometime next month, co-owner Bryan Gonzales tells us.
He describes the establishment as a “craft beer with focus on whiskey.” (Hops + scotch = hopscotch. Get it?) Plans include 40 draft tap handles with “a big focus on local craft breweries,” including Bootleggers, The Bruery and Cismontane, along with other favorites such as Stone and Lost Abbey. Down the line, Gonzales may collaborate with Bootleggers on a beer brewed specifically for HopScotch. Whiskey options will range from bourbon to scotch to Irish.

“I've always had a love for craft beer,” Gonzales says. “I'm interested in quality instead of quantity. There are so many places that turn and burn beer and liquor. I like knowing where my products are from. It's fun when you can touch hands with the people who make it.”
Gonzales and his partner Robert Marshall, the owners of the nearby Commonwealth Lounge & Grill, want HopScotch to have a laid-back vibe. There'll be a quaint patio, perfect for the summer months.
“It's not a nightclub,” Gonzales says. “It's a casual place to go for happy hour or after the game.”
As for food, the tavern will focus on slow-cooked dishes, including pulled pork, brisket, baby back ribs and pulled chicken, and “real simple backyard barbeque sides” like mac and cheese, macaroni salad, and pork and beans.
