Wings are easy to prepare, but difficult to make memorable. I mean, how much ghost chili can one douse before there are no more stupid daring appetites left to burn? An appetizer with its own handle is coveted–even more so since it already comes sauced! Unless they are true wings, you'll likely find a pile mixed with handy drumettes.
Gastropub grub isn't always high brow. Chefs may take familiar flavors and make 'em better with unexpected ingredients. On the small plates menu over at St. Roy Chef's Pub in San Clemente, there's a cook named Jared who's upping the ante on our feathered friends.

Sure, he'll crisp up poultry with a sweet and sour glaze. But preparing them using a duck was a first for us. Our meat was darker, the pairing richer. We already love a good confit, but this was an epic crossover of appetizer and entree. If we weren't so busy judging burgers, it would've been a double order for dinner. Wash it down with a pint on draft, and you're golden.
