My top dish in the last 12 months is from a restaurant owned by people from a Mexican state most non-Mexicans have never heard of. This dish alone makes me want to head for the Tijuana airport, get on a plane, and explore Querétaro to see whether everyone in the state can cook like this, or if the Cano family is outstanding even amongst the brash and accomplished dueñas of market fondas.

The best dish at Potzol den Cano is not pozole, but enfrijoladas. It's so simple:
make a savory, onion-spiked sauce out of bayo beans instead of the traditional Oaxacan black beans–every two-bit
Mexican-American combo-glop place's bean dip done correctly–then dip
fresh tortillas in them, wrap the dipped flatbreads around chicken, then
top with a drizzle of crema and crumbles of hot chorizo that dribble
tiny rivulets of chile-spiked oil over the dish.
Simple or not,
though, and regardless of the fact that this is 100% central Mexican
home cooking you're paying $7.95 for, it is breathtaking. I don't know a
single person who's ordered it and not had their eyes half-close when
they take the first bite.
Querétaro power indeed–and yet we're the only ones who've covered this gem.
