Awww, tacos from Alebrijes again? Yes, kids, we're going back to Santa Ana's pink taco truck, but this time, we're not getting one of their enormous, exotic creations piled high with six components on a hand-patted tortilla the size of a hubcap. This time, we're playing the fundamentals and getting the tripas tacos. According to truck owner Albert Hernandéz, it's probably his best-selling item.

Tripas, the boiled-then-fried, crispy-chewy bits of pig intestine, are one of my taco cravings that I seek out on every taquero's menu. The ones at this Alebrije's Grill truck are among the finest in the county, and worth trying, if you can get past their other specialties like the mighty taco acorazado, and the aforementioned quesadilla chilanga.
Like most everything at Alebrije's, your order will come with strips of grilled nopales, grilled onions, and a grilled jalapeno. How meta: nibble on some sweet, vegetal roughage to help out your own intestines while you eat some crisp-grilled chitlins.
