For the past year-and-a-half, The Blue Light Speak Cheesy has been grilling up gooey goodness within Downtown Fullerton’s Rialto Cafe. Offered on Friday evenings only, her team’s fed the laid back masses from 6 p.m. to midnight (or whenever they ran out). If you haven’t made it out there before, it’s about time you did. Service ends this month.
The brainchild of Andrea Chetakian, she originally teamed up with good friend and amazing chef Danielle Felix for an environment where folks could eat and drink beer without the rowdiness of DTF. When Danielle moved to Pittsburgh, she then recruited friends Mike Spies and Billy Senga to the team. Chetakian’s weeks are spent getting groceries and prepping for Blue Light service. It’s definitely enjoyable, but as Andrea put it, “However, if I had to wake up the next day and do it all again, it would feel more like work.” She’s decided to spend some time in Brooklyn for a change of scenery.
An everchanging menu, the trio puts out a new creation when inspired. They’ll be bringing back some favorites, but will retain a fairly consistent selection. Last week’s delicacies included a Pasteur J: BBQ pulled pork, caramelized onions, cheddar, Havarti and pickled cherry peppers for $12. They just sold out of the Bowie Blues while we were there (blue cheese, brie, grilled pears, rosemary, balsamic dip). All grilled cheeses are served with tomato soup dip. Grab some tater tots for a few bucks more.
Blue Light’s final Friday scheduled is January 29. Lucky patrons will be treated to an additional option— dessert! A couple of Andrea’s friends will be baking something sweet for the next two pop ups. They take Visa and MasterCard, but no AmEx. And if you miss out, all is not quite lost. “A girl can only eat so many grilled cheese sandwiches in her lifetime, but I don’t think I’ll be able to stay away from my Fullerton community for long. So keep an eye out for more pop ups in the future!”
